As posted by Jimmy on the forums, the Fifa 07 demo has been released. He also gave some insight into the demo itself, so check it out; "The Demo for FIFA 07 has finally been released! Player movement seems to be more fluent, shooting seems a little bizarre but I'm sure we'll all work it out before too long.. To get the demo, goto http://www.fifa07.ea.com/ and download the 'EA DOWNLOADER'. This program is used to view trailers and download demos of EA Products. Within this program you will be able to download the FIFA 07 Demo. Any more convenient methods of Getting the Demo that we discover will be posted here.
